At Oldwalls, we pride ourselves on offering freshly prepared dishes created by using the finest seasonal produce.
Our catering team is inhouse and led by Andrew Purnell-Rees. Andrew and his team have lovingly created a diverse wedding menu designed to suit the palate of even the most discerning foodie. We asked Andrew about all things ‘Taste of Gower’….
Q: What inspired you to become a chef?
A: I have a real passion for food and love how creative you can be with it.
Q: What goes into creating the perfect wedding menus?
A: My team and I research current food trends as well as consider the season. We start creating dishes allowing each course to flow into another. We take into account the vast array of tastes and dietary requirements, as a wedding menu must cater to a diverse audience. We then speak to our local suppliers. Oldwalls has its own vegetable and salad grower on Gower. He produces some of the finest produce in the area. We’re proud to source all of our meat from a family-run butcher in Penclawdd, and use only local seasonal produce where possible.
Q: Do you have a signature dish?
A: I don’t actually have a signature dish but my passion lies in desserts as I initially trained as a pastry chef. One of the most popular choices with our guests, however, is our traditional beef roast, a people pleaser at weddings and one of the finest roasts in Gower even if I do say so myself.
Q: How do you manage the day from a catering perspective?
A: I have an amazing team, we all share the same passion for food and work very well together. Everyone has a set role to play, we keep organised and ensure we are well prepared for all eventualities. All dishes are freshly prepared in our kitchen on the morning of the wedding, so as you can imagine it can be quite hectic but we thrive off the pressure.
Q: What’s the favourite part of your job?
A: Working in such a prestige venue where I have free reign to create beautiful dishes using premium products.
